Method

  1. Blend chickpeas, tahini, lemon, and garlic until very smooth.
  2. Stream in ice water with the motor running until light and fluffy.
  3. Spread on a plate, drizzle olive oil, dust paprika, sprinkle parsley.
  4. Serve with warm pita and accompaniments.
