Method
- Marinate chicken in soy and a bit of cornstarch for fifteen minutes.
- Toast chiles and peppercorns in a hot wok with a little oil.
- Stir-fry chicken until browned, add aromatics, then sauce and peanuts.
- Toss with scallions and serve immediately over rice.
