Method

  1. Marinate chicken in soy and a bit of cornstarch for fifteen minutes.
  2. Toast chiles and peppercorns in a hot wok with a little oil.
  3. Stir-fry chicken until browned, add aromatics, then sauce and peanuts.
  4. Toss with scallions and serve immediately over rice.
