Method

  1. Toss peaches with half the sugar, cornstarch, and bourbon, transfer to a baker.
  2. Cut butter into flour and the remaining sugar until coarse crumbs form.
  3. Stir in buttermilk and vanilla just until a soft dough forms.
  4. Drop dough over peaches and bake at 375F for fifty minutes.
