Method

  1. Dredge each steak in flour, then egg-milk wash, then flour again.
  2. Pan-fry until deeply golden, about three minutes per side.
  3. In the same pan, whisk butter and flour, then milk, into a thick gravy.
  4. Spoon gravy over the steaks and serve with mashed potatoes.
