Method

  1. Soak husks in hot water until pliable.
  2. Whip lard, then beat in masa, broth, salt, and baking powder until light.
  3. Spread masa on a husk, top with pork and sauce, fold and tie.
  4. Steam upright for ninety minutes until the masa pulls away cleanly.
