Chiles Rellenos
Roasted poblano peppers stuffed with cheese, fried in egg batter, and ladled with salsa.

Method
- Char and peel the poblanos, slit and stuff with cheese.
- Whip whites to stiff peaks, fold in beaten yolks for the batter.
- Dredge stuffed peppers in flour, dip in batter, fry until golden.
- Warm the salsa, plate the peppers, and ladle salsa over top.
