Roasted poblano peppers stuffed with cheese, fried in egg batter, and ladled with salsa.

Method

  1. Char and peel the poblanos, slit and stuff with cheese.
  2. Whip whites to stiff peaks, fold in beaten yolks for the batter.
  3. Dredge stuffed peppers in flour, dip in batter, fry until golden.
  4. Warm the salsa, plate the peppers, and ladle salsa over top.
