Braised veal shanks in white wine and tomato, finished with bright gremolata.

Method

  1. Dust shanks in flour, sear deeply on all sides in olive oil.
  2. Soften vegetables, deglaze with wine, add tomatoes and stock.
  3. Cover and braise at 325F for two and a half hours until fork-tender.
  4. Stir lemon zest, parsley, and minced garlic for gremolata, spoon over shanks.
