Osso Buco alla Milanese
Braised veal shanks in white wine and tomato, finished with bright gremolata.

Method
- Dust shanks in flour, sear deeply on all sides in olive oil.
- Soften vegetables, deglaze with wine, add tomatoes and stock.
- Cover and braise at 325F for two and a half hours until fork-tender.
- Stir lemon zest, parsley, and minced garlic for gremolata, spoon over shanks.
