Method

  1. Cook fettuccine in salted water until just al dente.
  2. Melt butter in a wide pan, add a ladle of pasta water.
  3. Add pasta and toss vigorously, sprinkling parmesan in stages.
  4. Add more water as needed for a glossy sauce, finish with pepper and parsley.
