Spaghetti alla Carbonara
Silky egg-and-pecorino sauce with crisped guanciale and cracked black pepper.

Method
- Cook spaghetti in well-salted water until very al dente.
- Render guanciale in a wide pan until golden and crisp.
- Whisk eggs, yolks, pecorino, and lots of pepper in a bowl.
- Off heat, toss pasta with guanciale, then the egg mixture and pasta water until creamy.
