Method

  1. Cook spaghetti in well-salted water until very al dente.
  2. Render guanciale in a wide pan until golden and crisp.
  3. Whisk eggs, yolks, pecorino, and lots of pepper in a bowl.
  4. Off heat, toss pasta with guanciale, then the egg mixture and pasta water until creamy.
