Classic Three-Cheese Mac and Cheese

Method

  1. Boil pasta one minute shy of package time, drain and reserve.
  2. Melt butter, whisk in flour, slowly add milk to make a smooth sauce.
  3. Off heat, fold in both cheeses and the nutmeg until glossy.
  4. Combine pasta and sauce in a buttered skillet, top with panko, broil three minutes.
